Almond flour sounds good, too. I like to cook everything on a low heat if I can. With almond meal, I think I could get away with baking it instead of frying it, because the almond would crisp up on its own in the oven. I will try that with the rest of it!
I can roast the onion as well, which I adore. I ate three roasted onions the other day—I eat a pound of onion a week, I swear. I love sweet onion raw, too. It's like my latest obsession, along with brussels sprouts and kale.
Maybe I'll try ground heart with the beef in meatballs.
